Happy Memorial Day!
I whipped up this dessert yesterday when I was standing in my pantry craving something sweet! It is super super simple and really delicious! I also think you could make it with just about any canned sweet fruit!
I was looking in my pantry and had some pineapple tidbits and a cake mix, I literally googled “what can I make with pineapples and cake mix” and this recipe came up!

After our pool adventure I wanted something that was super easy to make and this recipe fit the bill perfectly! You literally dump everything into the pan you bake it in! If I hadn’t made homemade whipped cream I wouldn’t even have had a dirty dish!
Ingredients:
2 cans of pineapple tidbits (40 oz total)
1 box cake mix
1 teaspoon vanilla
2 tablespoons lemon juice
1 stick of unsalted butter
Directions:
Dump pineapples and their juice into greased 9×13 cake pan
add vanilla and lemon juice, stir to combine
top with cake mix
cut butter into small slices and place on top of cake mix
bake for 20 minutes
remove pan and spread melted butter over cake mix so there is no dry cake mix (this step is optional)
bake an additional 22 minutes or until cake is golden brown
serve with vanilla ice cream or whipped cream
store covered in refrigerator
